My New Go-To for Planted-Based Meal Prep Inspiration

It all started last weekend with some harmless humble bragging over text. I told a client that my sweet husband Peter was busy in the kitchen making us blueberry protein muffins for the week. Since her husband, my awesome client Dan, was also on the thread she hit me back and raised the stakes by letting me know he was busy roasting carrots and sweet potatoes to make them Carrot Cake Smoothies. Uhm, I don’t know about you, but I’m DOWN for anything with the word cake in it. So I asked for the recipe and it’s got me drooling (dates and chia seeds and pineapple and cinnamon and all sorts of yummy, vegan goodness). 

Now for the bad news. I can’t share the actual, full recipe with you here. Because it’s not posted online. It’s from the Love & Lemons Simple Feel Good Food cookbook by Jeanine Donofrio which includes 125 “plant-focused meals to enjoy now or make ahead”. I have it on good authority that it’s loaded with great inspiration for eating all the colors, vitamins and fiber! It’s killing me that I can’t post the actual recipe, but to respect the author (and copyright law!) I will resist. But there are hundreds of amazing other recipes on her web site and IG

I highly encourage anyone looking to up their plant-based game to pick up the cookbook and prioritize the Carrot Cake Smoothies!
