"Cooking with JJ" Episode 1: Banana Blueberry Protein Muffins

I'm super excited to share the premier episode of Cooking with JJ, a video partnership between Jonathan Jordan Fitness and the incredible producers at NewsUpNow.org. In each episode we'll share delicious and healthy meal prep hacks, recipes and techniques to fuel your life. Sometimes I'll have special guests like the amazing Allison Tibbs and Morgan McEvilly and we'll cover everything from the best pre- and post-workout food ideas, go-to snacks, simple and balanced meals and ways to reduce your time in the kitchen so you can have more time doing the things you love!

In this episode I'll show you how to make my famous Banana Blueberry Protein Muffins. I have made these every week for years and I eat two as part of my breakfast every day! If you are looking for ways to get more protein and plant-based foods into your day, give these a try.

You'll Need:

  • 3-4 ripe bananas (the darker, the better)

  • 1.25 cups of egg whites (believe it or not, I prefer egg whites; they make the muffins fluffier and lower calorie than eggs)

  • 1/3 cup coconut flour

  • 6 scoops of protein powder (I like BioChem Vanilla Whey protein available at Whole Foods or Amazon)

  • 0.25 cup chopped walnuts

  • 1 cup blueberries (organic if available)

  • 1 tbs of Trader Joe's Pumpkin Pie Spice or 1 tbs of Cinnamon and 1 tbs Nutmeg
