Mama Haralabopoulos' Shrimp and Feta Bake

When it comes to cooking, Greek mothers have legendary skills. And my mother-in-law is an Olympian in the kitchen! When she visited for Christmas she whipped up this simple, delicious and healthy dish and it’s quickly become a favorite in my house. It’s warm and filling with less than 400 calories and only 15g carbs and 36g of protein. Serve it with a little pita and hummus or a simple green salad and enjoy!

What To Do

  1. Start with about 8oz of shrimp per person. You can buy fresh shrimp from the market and clean/devein them if you're feeling fancy or you can buy a bag of frozen shrimp that are ready to go. The fresh will be more tender and delicious but the frozen are faster and still really good.

  2. Whichever kind of shrimp you choose, make sure they are completely de-thawed and rinsed. This is important, dry the shrimp completely by gently blotting them with paper towels.

  3. Marinate the shrimp in a bowl for a few minutes using (per person) 1 tbs of olive oil, black pepper and crushed garlic to taste.

  4. You'll need some oven safe ramekins (fancy talk for dishes). I suggest CorningWare (23oz size or thereabouts is great).

  5. Coat the bottom of each dish with 2 tbs of marinara sauce (from a jar or can) and 1 tbs of breadcrumbs.

  6. Layer shrimp, sliced tomatoes and 2 tbs crumbled feta and top with pepper and oregano.

  7. Bake uncovered at 400 for 35-40 minutes (until bubbling).

  8. Let cool for 5-10 minutes before serving.
