Thai Coconut Basmati Rice with Mango and Seared Scallops

I’ve been in a bit of a meal prep rut lately. I rely on my go-to recipes for breakfast and lunch (smoothies, protein muffins, curry chicken salad—all the usual suspects) and Freshly for dinner. And they’re still awesome! But this week I had a craving for something different. Thankfully my meal prep guru partner Peter stumbled across this super tasty and easy recipe on EatingWell.com for Thai Coconut Basmati Rice with Mango and Seared Scallops.

He followed their easy instructions and added his own secret weapon of a teaspoon of Thai chili paste which gave just a hint of a kick which brought out the flavor of the mango and scallops. You could so this with shrimp or tofu instead which would also be amazing. I’ve included the nutritional info below. Full disclosure, this says it makes four servings. In my house it makes two. It depends on how hangry you are and what your caloric/macro needs are. But a serving will run you between 300-600 calories while packing a solid serving of lean protein. Om nom.
