"Cooking with JJ" Episode 4: Magic Morgan Energy Bars

In the NewsUpNow.org kitchen with me this week is one of my very favorite humans. Morgan McEvilly is a talented personal trainer, yoga instructor and wellness guru. I’ve learned so much from her over the years and I’m so grateful she found the time to come show us how to make her famous Magical Morgan Energy Bars. These yummy, plant-based treats are perfect pick-me-ups for quick, natural energy and make a great pre- or post-workout treat. All you need is a sturdy food processor and a selection of your favorite nuts, dried fruits and fresh dates.

Todays Recipe: Blueberry Dream

  • 1 cup mixed walnuts and cashews

  • 1 cup mixed blueberries and bing cherries

  • ½ cup dried banana chips

  • 1 cup dates

Directions:

  • In a food processor or Vitamix, mix together nuts and dried fruit.

  • Add dates until a workable dough is formed.

  • Add flavoring and/or fillings and pulse until combined.

  • Shape into one large bar, smaller individual bars or balls.

  • Wrap in parchment paper or plastic wrap or place in an airtight container.

  • Can be kept in the refrigerator or freezer in an airtight container for up to a month.

Peanut Butter & Jelly

  • 1 cup peanuts

  • 1 cup dates

  • 1 cup dried cherries or mix raisins

Apple Pie

  • 1 cup mixed almonds and walnuts

  • 1 cup dates

  • 1 cup mixed raisins and dried apple

  • 2 tbsp cinnamon

Banana Bread

  • 1 cup almonds

  • 1 cup dates

  • 1 cup dried banana

Lemon Bar

  • 1 cup mixed cashews and almonds

  • 1 cup dates

  • Zest and juice of 1 lemon

Blueberry Muffin

  • 1 cup cashews

  • 1 cup dates

  • 1 cup dried blueberries

  • Zest and juice of 1 lemon

  • 1 vanilla bean, scraped
