Sarah's Fudgy Black Bean Brownies

When I came across this recipe for healthy fudge brownies made with nutrient-dense ingredients like black beans, avocado and dates I was like… gross. Ain’t no way those are going to taste like real brownies. But I have a secret weapon in my client Sarah. She is a fantastic cook and baker and has a keen interest in eating things that are delicious AND healthy. So she took the recipe into her kitchen and did some work on it to make it taste even better without sacrificing the good stuff. And honestly they taste like “real” brownies. Win!

Sarah’s adaptations from the original recipe:

  1. Use more almond milk than specified, I used between 3/4 to a full cup - otherwise it's so dry it's impossible to spread in the pan (and most certainly doesn't "pour" like it says in the recipe!) and definitely comes out dry!

  2. Be generous with the almond butter - I was closer to 3 tbsp

  3. I added chopped up dark chocolate (good quality stuff with at least 70% cocoa)

  4. Only cook for 25 minutes - I cooked for the full 35 minutes the first time and there wasn't a bit of fudginess in sight!

  5. I haven't tried their optional avocado chocolate topping as that sounded a healthy step too far   However, I mixed some greek yogurt with some raspberry jam and used that as a topping and it was delicious!
