Banana Blueberry Explosion Protein Muffins

These little bastards are LITERALLY my favorite food right now and are a variation on my protein pancake recipe. Pancakes are delicious and are great for a special occasion, but for a normal week they are a lot of work. So my genius partner turned them into muffins and makes them every Sunday so we have them for the week ahead. They are great pre/post workout snacks or perfect at night as a healthy dessert treat. 

Mix in a big bowl with a fork:

  1. 3 ripe bananas (the darker, the better)
  2. 6 eggs or 1.25 cups of egg whites (believe it or not, I prefer egg whites - they make the muffins fluffier and lower calorie)
  3. 1/3 cup coconut flour
  4. 6 scoops of protein powder (I like BioChem Vanilla Whey protein you can get at Whole Foods or Amazon)
  5. 0.5 cup chopped walnuts
  6. 1 tbs of All Spice or Trader Joe's Pumpkin Pie Spice or 1 tbs of Cinnamon with 1 tbs Nutmeg

Spray a non-stick muffin tray and fill each cup 3/4 full with the batter. Top with EXACTLY five blueberries in a star pattern (trust me, this is optimal so each bit gets a blueberry blast). Or if that's too fancy you can just mix 1 cup of blueberries into the batter. You can also play around with other berries. I've used chopped strawberries and blackberries too. But blueberries remain my fave. 

Bake at 375 degrees for 22-28 minutes. 

Let cool and place in a container in the fridge for the week. They will last all week. If you need them last longer, they also freeze nicely, Make sure to eat them so you get a blueberry with each amazing bite.
